2 Tbs. rice-vinegar
3 Tbs. reduced-sodium soy sauce, divided
1 Tbs. sugar
1/2 tsp. grated ginger
16 wonton wrappers
1/2 cup frozen chopped spinach, thawed and excess water squeezed out
3 Tbs. corn kernels
3 Tbs. grated carrots
